Preheat oven to 425.
Spiced Nut Crust Ingredients:
1 tablespoon organic, unsalted butter
3 tablespoons organic, unsalted butter - melted
2 cups ground nuts (food processor, any kind you like, usually takes about 7 ounces to yield 2 cups)
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon Just Like Sugar (purchase from our products page)
Spiced Nut Crust Directions:
- Take 1 tablespoon butter and butter a 9" pie plate, all the way up the sides.
- Combine the rest in a bowl, stir to mix.
- Dump in to pie plate, press out evenly. Note - if you want more "crust" going up the sides, increase the ground nuts and butter.
Pumpkin Filling Ingredients:
2 organic free range eggs, plus 1 yolk
1 15 ounce can pure pumpkin
1 12 ounce can evaporated milk
1/2 teaspoon sea salt
2 teaspoons Pumpkin Pie Spice
1 teaspoon Nutmeg
1/3 cup Just Like Sugar
Pumpkin Filling Directions:
- In a large bowl, thoroughly whisk the eggs
- To the bowl add the canned pumpkin, evaporated milk, sea salt and spices.
- Blend well with a mixer
- Gradually add Just Like Sugar beating for less than a minute.
Pour into pie crust.
Bake in 425 oven for 15 minutes.
Reduce heat to 350 and cook for another 35-45 minutes.
You know it is done when you insert knife "off center" and it comes out clean.
Remove to cool on rack for about 2 hours, chill and/or serve.
