The Book!
One iof my favorite dinners is SOUP....and it can take you through a hectic week, on top of being delicious and good for you.  This is my variation of Sopa Azteca Soup.

7 cups vegetable stock
1 cup fresh diced tomato
1 pasilla chile, stemmed, seeded, rough chop
1 teaspoon Mexican oregano

Puree the above in processor or blender, set aside

1 cup cooked organic brown rice, set aside

2 tablespoons EVOO
1/2 cup diced carrot
1/2 cup diced sweet onion
1/2 cup frozen roasted corn (fresh if you have it)

Heat saucepan over medium heat. Add oil. Add carrot and onion, and cook until just slightly brown.  Add corn and cook for a minute.  Add
cooked rice and chile puree.  Bring to a simmer, taste for salt and pepper.  Simmer for about 20 minutes and you are done.

For the garnish, you have many choices but keep it healthy.  I recommend lots of diced avocado and a fresh squeeze of lime!!
